Natamycin is a fungicidal antimycotic of the polyene macrolide group. It is produced by several species of Streptomyces fermentation method.
Natamycin is a food preservative that is approved and used in more than 150 countries around the world. The World Health Organization (WHO), European Food Safety Authority (EFSA) and Food and Drug Administration (FDA) have evaluated Natamycin thoroughly and all list it as safe for human consumption. Natamycin is also known as nature drug ( Ophthalmic EYE DROP) substance.
Natamycin protects foods through a unique mechanism that targets ergosterol in the cell wall. Ergosterol is a building block of yeasts and molds, which is responsible for intracellular nutrient transport, and therefore vital for their survival. As ergosterol is not present in the outer membranes of bacteria, these remain unaffected.
The natural mold inhibitor Natamycin helps reduce food waste by protecting a wide variety of products and thereby extending shelf life, to avoid food spoilage and waste.
